{Good Eats} Marinara Sauce + Homemade Meatballs

So, way back when I posted about how I don’t cook meat. Well that hasn’t really changed, if I imagine its cookie dough and I’m preparing to bake cookies instead of meatballs! It was a dreary, rainy weekend, so I decided to whip up my dad’s recipe for delicious marinara sauce. Nothing goes better with that than yummy homemade meatballs, so I toughed it out and made some. And it was SO worth it.

Marinara Sauce

  • 1 onion, chopped
  • 3 garlic cloves, chopped
  • 1 fennel, chopped
  • 2/3 bottle of cheap red wine, drink the rest if you want
  • 2 cans of crushed tomatoes
  • 1 can tomato paste
  • Herbs de Provence {or any blend of Italian spices}
  • Hot pepper flakes
  • Salt & pepper to taste

Directions:

  • Dice onion, garlic, and fennel. Add to pan on medium heat with olive oil. Add herbs, red pepper flakes, salt, and pepper. Let simmer 5-10 minutes {the longer it simmers, the better it turns out}
  • Add 2/3 bottle of wine. Let simmer 25-30 minutes.
  • Add crushed tomatoes and paste. Let simmer another 25-30 minutes. Add a small bit of water if too thick.
  • Serve with homemade meatballs and you’ve got yourself a delicious, somewhat nutritious, easy to prepare meal!

For dessert, I made cherry cobbler… Post on that coming later this week!

Happy Monday!

{Good Eats} Guacamole

Guacamole… I don’t think there’s a better dip/sauce/whatever you want to call it in the world. For the longest time, I refused to eat it, I thought it was gross and kind of reminded me of that icky green ketchup stuff. Anyways, that’s all changed, and I’m so glad. It’s good on just about anything! My friends have been asking for my recipe, and honestly, once I have the basic ingredients, I guestimate on how much of each to use, but here goes:

*Disclaimer: I definitely can’t take responsibility for this recipe… My masterchef of a dad came up with it, and deserves full credit!

Ingredients:

2 avocados {The ripeness totally determines how good it will be. The riper the better, but not brown}

2 Roma tomatoes

1 small onion

1 jalapeno

1 lime {for juice}

2 tsp cayenne pepper {to taste}

Salt {to taste- definitely don’t go light on it, second to avocado ripeness, salt makes all the difference}

Pepper

*All of these ingredients can be adjusted to what you like, there’s no set ratio, whatever you think tastes good! This is just my preference…

Directions:

Mix all ingredients together, serve with your favorite chips and margarita of choice!

Happy Weekend and Happy Summer!

{Sweets} Mrs. Schae Bars

Lately, I’ve been using good ‘ole recipes from my childhood to whip up some delicious sweet treats! I decided to make these famous snack bars my mom always used to make my skating team for competition weekends… I think we’d make about 5 batches before leaving on Thursday nights to keep everyone sugared up and happy 🙂 I personally don’t think you can go wrong with peanut butter, marshmallows and M&Ms!

Ingredients:

  • 2 1/2 c halved pretzel sticks (I used the butter snap squares and just broke them up)
  • 2 c corn Chex
  • 1 1/2 c M&Ms (holiday if available!)
  • 1/2 c butter
  • 1/3 c peanut butter
  • 5 c (10.5 oz bag) mini marshmallows

Directions

In a large bowl, combine pretzels, Chex, and M&Ms.

Melt butter and peanut butter carefully- low heat. Add marshmallows to butter mix and stir well.

Melt this mixture in microwave (you can do stove top, I just find this easier). Stir often!

Pour over pretzel mix. Stir gently to evenly coat. Press into greased (Pam) 13x9x2 inch pan. I spray my hands with Pam also so its easier to press- or you could try pressing with sprayed parchment paper.

Cool until firm. Cut into squares. Wrap well to keep fresh! {Warning- don’t sample unless you plan on eating the entire pan. In that case, buy enough supplies for 2 batches…!}

{Sweets} Mom’s Monster Cookies

Growing up, my mom used to make the most scrumptious monster cookies! I remember taking them to pretty much any function that required a treat of some sort. I picked up some spring M&Ms and got to work…

Ingredients:

  • 3 eggs
  • 1 1/4 c. packed light brown sugar
  • 1 c. granulated sugar
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla (I always use a little more)
  • 1 12-oz. jar of creamy peanut butter
  • 1 stick butter, softened
  • 1/2 cup M&Ms (seasonal, of course!)
  • 1/2 cup chocolate chips
  • 2 tsp. baking soda
  • 4 1/2 cups quick-cook oatmeal (not instant)

Directions:

  • In very large mixing bowl, combine eggs and sugars until well blended and creamy. Add salt, vanilla, peanut butter, and butter. Mix well, no lumps! Add M&Ms, chocolate chips, baking soda, and oatmeal.
  • Once this is all blended, I typically add more M&Ms and chocolate chips than the recipe calls for- be careful… too many and the dough won’t stick together, too few, and its just not as yummy!
  • Refrigerate for 1-2 hours.
  • Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Bake for 8-10 minutes or longer depending how big you make them!
  • I typically can get 50-60 cookies out of the batch because I make them smaller so I can justify eating more… But the recipe says it makes about 3 dozen.

Happy Friday and Happy Baking!

{Sweets} Blackberry Muffins

Happy Friday!

YUM is all I can say about these!

Blackberries were on sale at the grocery store earlier this week, so I bought a few containers and searched Pinterest for a recipe. These were probably the most delicious muffins I have had in a long time! So easy to make, too- they were jam packed with flavor and were the perfect consistency!

{Sweets} Birthday Cheesecake

I’ve been wanting to attempt to make cheesecake for a while now, and Grant’s birthday was the perfect occasion! Although its my favorite dessert, I’ve always had it made for me or had it at a restaurant, so the challenge was on. I decided on a plain, New York style cheesecake to keep it simple and classic…

I used this recipe, but made a couple changes. For the crust, I used 1 1/2 cups graham cracker crumbs, 1/4 cup melted butter, 1 tsp cinnamon, and 1/4 cup sugar. This was the perfect change- the crust was perfectly sweet and stayed together when it was cut. I also cooked it in a water bath (be sure to line the outside of the pan with aluminum foil! And, I baked it for an hour at 325F instead of 350 per the recipe.

I have to say it turned out better than I ever expected… Definitely keeping this recipe!
