Nashville Birthday Box

As you know, Grant’s birthday was last week and I made this cheesecake for dessert… I love ANYTHING birthday related and I’m a big believer that everyone needs a present to open on their birthday, so I wanted to think of something fun, creative, and not so “typical birthday.” The question was, what to do? I decided to put together a “Nashville Birthday Box” full of all sorts of things for us to do together! So, what’s in this box?

  • Bottle of Arrington wine from Arrington Vineyards, not too far out of the city. Its a perfect thing to take on a picnic there, considering the weather has been so beautiful!
  • Volunteer Traditions Tennessee t-shirt… they have great things representing all of the southern states!
  • Giftcard to the Country Music Hall of Fame for 2 tour tickets
  • Giftcard to the  Yazoo Brewery for 2 tour tickets- a small, local Nashville brewery
  • Taco Mamacita giftcard, one of of my favorite Nashville restaurants
  • Frothy Monkey giftcard, a great local brunch spot within walking distance from my house
  • Of course, nothing is complete without some of mom’s chocolate from her store!

We’ve already gone to the Country Music Hall of Fame and it was fantastic! Such a cool place, a definite Nashville must.

Happy 2012!

Happy New Year!

As I think about the past year, I can only smile and hope that 2012 is as half as wonderful as 2011 was! Marked by adventures, memories to last a lifetime, and new friendships, it truly was one of the best years. Highlights include: Packers WINNING the Superbowl, a family trip to Turks and Caicos, Vanderbilt Grad School acceptance, birthdays galore, moving into my first place, countless mini-trips to visit friends across the country, and quality time with friends and family. I have high hopes for 2012, and its already off to a terrific start!

In typical fashion, I wanted to bake something for our kind friends to get their new year off to a “sweet” start… Nothing better than homemade coffee cake to welcome 2012. I’ve never made coffee cake before, so I went to Epicurious (my favorite recipe site) to find a yummy recipe. Here is the link to the one I used: Sour Cream Coffee Cake. I did make a couple substitutions, leaving out nuts, chocolate chips, and raisins, and added a little more sugar (can’t go wrong!), but I think it turned out delicious (I HAD to make one to sample, right?!).

Happy 2012!

Here’s hoping your new year is off to a super sweet start!

PS: I’m attempting to learn how to add more cool features to the blog. Slowly but surely it will be greatly improved throughout the year! Resolution #4 of 4538296795863   🙂

Give Thanks

Thanksgiving this year means so much to me than in years past. I’m not sure if its because I’m an actual adult now and feel “that much” older, or if I’m gaining a new perspective and appreciation for life. Regardless, as I think about the past year and life in general, I’m feeling incredibly thankful. From my wonderful, loving, supportive family, to my sweet friends, education, and health, I am realizing I am so, so blessed in life.

After a Packers win{!!}, today is sure to be a great celebration, of all we have to give thanks for in this world. Happy Thanksgiving, Ya’ll! Now onto the cooking…

Home Sweet Wisconsin

I absolutely love coming home. I think the perks of living far away make coming home that much more sweet- and sweet it is, literally. My mom owns a chocolate store, so goodness, do I get more than my share of treats when I’m here- and I don’t have to make any of them! I also get pillow chocolates, just like at hotels, except these are actually made with love. So yes, I enjoy coming home, and the benefits that come with it. I also like coming home for the holidays because we have a family tradition of getting our Christmas tree the day after Thanksgiving. We either go down the street to a Christmas tree farm, or drive up north to my grandparents to chop down our own (see below).

Schaefer Family Tree- fresh from the forest

Naturally, I thought we would be doing the same this year- BUT NO, my parents “surprised” me and got a FAKE TREE, pre-lit, no less, that is currently in a BOX in the garage! Like we actually have to put it together and “fluff” it. You shouldn’t have to assemble a tree. I can’t believe it. It could have something to do with the fact that I had a severe allergic reaction to the pine sap last year and they were being thoughtful and didn’t want a repeat of that… but nonetheless, I think there is something so special and “Wisconsin-ish” in having a real tree that was probably chopped down less than a mile from our house!

So anyways, its really great to be home, fake tree and all, and can’t wait for a full 2 days of cooking for Thanksgiving. Oh and that little football game… Packers vs. Lions. What an excellent way to kick off turkey day!

So… I’ve finally given in and am starting a blog, all because of peer pressure. For a while, my friends have been suggesting I start documenting my adventures in the kitchen, parties, and life in general, so here it goes!

A little bit about me- I absolutely LOVE to bake and cook.. anything really, except meat. I don’t cook meat. Why? It is gross and disgusting and cold and squishy, and the only way I’d think of doing anything to meat would be with 3 pairs of gloves on. And then, its only a slight possibility. Sweet treats are my specialty, and unfortunately for my family and friends, I’m sure they’ll gain at least 5 pounds this year, because I have to share, right?! I also love to decorate and do pretty much anything domestic. Laundry, cleaning, decorating, you name it, I love it. Themed parties are my thing, and I’m counting down the days until Christmas party season arrives. In my opinion, the most wonderful time of year is November 1 to January 1… bring on the holidays!

In real life, I’m in nursing school at Vanderbilt, only because my parents said I wouldn’t be successful as a wedding planner. I’m thinking they were wrong (even thought they’re always right), so in a year I’ll be a pediatric nurse practitioner and put this expensive education to good use. I’m hoping to just combine the 2 and plan my patients’ birthday parties…? Just a thought, and a really good idea I might add.
